Where the extra thickness pays
5 mil is worth the difference in the dish pit, on heavy prep, and anywhere staff are handling bones, shells, hot pans or cleaning chemicals. A tear at a prep station can mean scrapping a batch; at that point the few dollars per case between 3 mil and 5 mil stops being the relevant number. For service, bar and light handling, the 3 mil version is the better economics.
Why black
Black hides citrus, wine and sauce staining across a long shift and looks deliberate in front of guests. Kitchens commonly run black in service areas and blue in prep so a torn fragment is immediately visible against food.
